No-Bake Mini Banana
Ingredients:
For the crust:
1 ½ cups graham cracker crumbs
½ cup unsalted butter, melted
¼ cup granulated sugar
For the filling:
2 medium ripe bananas, sliced
1 (3.4 oz) package instant vanilla pudding mix
2 cups milk
1 teaspoon vanilla extract
1 cup whipped cream (or whipped topping)
For the topping:
Extra sliced bananas
Whipped cream
Chocolate shavings (optional)
Instructions:
Prepare the crust:
In a bowl, mix the graham cracker crumbs, melted butter, and sugar until well combined.
Press the mixture firmly into the bottom of mini pie tins or cupcake liners to form a crust.
Make the filling:
In another bowl, whisk together the instant vanilla pudding mix and milk until it thickens, about 2 minutes.
Stir in the vanilla extract and whipped cream until combined.
Layer the filling:
Place a layer of banana slices in each mini crust.
Spoon the pudding mixture over the bananas, filling the crust to the top.
Chill:
Refrigerate the mini pies for at least 2 hours to set.
Serve:
Before serving, top with additional banana slices and whipped cream. Optionally, add chocolate shavings for a delightful twist.
