Ingredients for the healthy coconut cake
2 eggs;
1 pinch of salt;
Vanilla essence (to taste);
1 tablespoon of erythritol (10 g);
⅔ cup unsweetened plain yogurt (125 g);
1 cup of finely grated coconut (80 g);
1 teaspoon baking powder (5 g);
Butter to grease the pan;
Preparation method
First, crack the eggs into a bowl and add a pinch of salt, a few drops of vanilla essence and the erythritol. Then beat well until the mixture is smooth and the erythritol is well incorporated.
Then add the unsweetened natural yogurt and the finely grated coconut, mixing again.
Then cover the bowl and let it rest for about 5 minutes so that the coconut absorbs the yogurt well, giving the cake a more uniform texture.
Then, add the baking powder and mix gently until it is incorporated into the dough.
